The purple yam from the Philippines

What is Ube, and why is this intensely purple ingredient appearing more and more often in drinks, desserts and baked goods? The name refers to a yam with naturally purple flesh. It is particularly well known in Filipino cuisine, where it has long been used in a wide variety of sweet dishes.

Its striking colour and mild flavour have also made the purple yam increasingly popular outside the Philippines. Once dried and ground, it is easy to store and measure for different recipes. Our Ube Latte Powder, however, consists of pure Ube powder.

A traditional ingredient in Filipino cuisine

In the Philippines, the purple yam is used for many desserts, cakes and ice creams. One well-known preparation is Ube Halaya. The yam is cooked, mashed and made into a sweet paste that can be eaten on its own or used as a base for other dishes.

Bread, pastries, creams and chilled desserts also receive their characteristic colour from this ingredient. Its connection with Filipino cuisine therefore goes back much further than the current trend for purple latte drinks.

What does the purple yam taste like?

The flavour is milder than the vivid colour might suggest. It is often described as slightly sweet, gently earthy and subtly nutty. Depending on the preparation, it may also have notes reminiscent of vanilla.

This makes it easy to combine with milk, plant-based alternatives, coconut or vanilla. It also works well in baked goods without completely overpowering the other ingredients.

From root vegetable to fine powder

To produce the powder, the yam is processed, dried and finely ground. In this form, it is easier to measure than the fresh root and can be used in both drinks and food.

However, not every powder sold is automatically suitable for preparing a drink directly. Some products are intended mainly for cooking or baking and need to be heated before consumption. Others contain sugar, milk powder, flavourings or additional colourings.

You should therefore always check the ingredient list and the preparation instructions provided by the manufacturer. The important point is whether the product is specifically suitable for drinks and how it should be prepared.

What is in a ready-made latte mix?

Many products labelled Ube Latte are pre-mixed blends. In addition to the purple yam, they may contain sugar, milk ingredients or flavourings. This often makes them quick to prepare, but gives you less control over the final recipe.

The Ube Latte Powder from TeaSense consists of pure powder from the Philippines. You can therefore choose your own milk or plant-based alternative and decide how sweet you would like your drink to be.

How to prepare a purple latte

To make a latte, first mix a small amount of powder with a little warm water. This helps create a more even mixture. You can then add warm milk or a plant-based alternative.

Depending on your taste, you can sweeten the drink with sugar, honey, vanilla or another sweetener. A small milk frother can help distribute the powder more evenly throughout the liquid.

As this is not a typical instant drink, a small amount may settle at the bottom of the cup. This is normal for a finely ground natural product. Simply stir the drink again before serving.

Why can the colour vary?

The colour of the finished drink depends on several factors. These include the amount of powder used, the chosen liquid and the ratio of the ingredients. The violet tone is usually more noticeable in pale milk than in a darker plant-based drink.

Natural products can also vary slightly in colour and flavour. A drink therefore does not need to look exactly like an image on social media. Some of those drinks are made using prepared mixes, flavourings or additional colourings.

Ideas for cooking and baking

The powder is not limited to latte drinks. It can also be used for a variety of sweet recipes and your own creations:

Milkshakes and smoothies

Pancakes and waffles

Cakes and muffins

Creams and fillings

Yoghurt and desserts

Ice cream and chilled sweets

When trying a new recipe, begin with a small amount. You can then gradually increase the colour and flavour. Depending on the recipe, baking may require a little additional liquid because the fine powder absorbs moisture.

Not the same as taro or purple sweet potato

The purple yam is sometimes confused with taro or purple sweet potato. They are different plants, however. Taro often has pale flesh with small purple specks and a more starchy flavour.

Purple sweet potatoes can also have an intense colour, but they differ botanically and in flavour from the yam commonly used in the Philippines. The names should therefore not be treated as interchangeable.

Pure Ube powder

The Filipino yam combines an unusual colour with a mild and versatile flavour. In powdered form, you can use it for a homemade latte, desserts or baking.

Discover our Ube Latte Powder from the Philippines or browse our other drink powders.

What is Ube?
