Fennel tea is one of the classic herbal infusions and is known for its mild, slightly sweet flavour. It is prepared from dried fennel seeds, which release their characteristic aroma when infused in hot water.
You can enjoy fennel tea on its own or combine it with other spices such as anise and caraway. For a more aromatic infusion, lightly crush the whole fennel seeds shortly before preparation.
What is fennel tea?
Fennel is a plant used both in cooking and for herbal infusions. While the fennel bulb is widely known as a vegetable, the dried seeds are mainly used to prepare fennel tea.
The small, elongated seeds have an intense aroma reminiscent of anise. When infused with hot water, they produce a golden herbal tea with a mild sweetness and a pleasantly spicy note.
Fennel tea contains no leaves from the tea plant and is therefore naturally caffeine-free. It is a suitable choice for anyone who prefers to avoid caffeinated drinks in the afternoon or evening.
What does fennel tea taste like?
Fennel tea has a mild, spicy and slightly sweet flavour. Depending on the amount used, the typical anise-like aroma can be subtle or more pronounced.
For a milder cup, use slightly fewer fennel seeds and avoid steeping the infusion for too long. For a stronger flavour, lightly crush the seeds and extend the steeping time a little.
How to prepare fennel tea from whole seeds
Whole fennel seeds retain their aroma longer than heavily crushed seeds. Lightly crush them just before preparation using a mortar or the flat side of a spoon. This helps the aroma develop more fully during infusion.
Use around 1 to 2 teaspoons of fennel seeds for one cup containing approximately 200 ml of water. Pour boiling water over the seeds and allow the tea to steep for about 8 to 10 minutes. Afterwards, strain the seeds using a tea strainer.
You can adjust the amount according to your personal taste. Fennel seeds have a distinctive aroma, so even a relatively small quantity may be sufficient for one cup.
Combining fennel with anise and caraway
Fennel is often combined with anise and caraway. All three spices have a distinctive aroma, but their flavours differ noticeably.
Anise enhances the sweeter side of fennel, while caraway adds a stronger and slightly more earthy note. You can use equal parts of all three ingredients or adjust the proportions according to your preference.
Fennel can also be combined with mild herbs or a small amount of peppermint. Add extra ingredients sparingly at first so that the characteristic fennel flavour remains noticeable.
Loose fennel tea or tea bags?
With loose fennel seeds, you can choose the amount yourself and lightly crush the seeds immediately before preparation. This allows you to control how mild or intense your fennel tea tastes.
Tea bags are convenient, but they often contain more finely crushed ingredients. Whole fennel seeds can be stored for longer and used in different ways, including in your own herbal and spice blends.
