Sencha is especially interesting because small differences in temperature and steeping time can noticeably change the taste. With slightly cooler water, the tea tastes softer, while hotter water brings out the more tart notes.
Preparation of Sencha Tea
For preparation, use about twelve grams of tea per litre of water. Pour hot water at around 70 to 80°C over the Sencha Tea and let it steep for one to two minutes. This keeps the infusion clear and allows the fine green tea notes to come through well.
If you prefer a stronger cup, you can use a little more tea. A much longer steeping time can make green tea taste more tart, so a short and precise steeping time is recommended.
