Matcha is a finely ground Japanese green tea made from the leaves of the Camellia sinensis tea plant. It is an important part of Japanese tea culture and is recognised by its vibrant green colour and distinctive flavour.

Depending on the grade, it can taste grassy, creamy, slightly sweet, pleasantly bitter or rich in umami. Besides the traditional preparation with water, it is also suitable for lattes, smoothies, desserts and many recipes.

What is Matcha?

Before harvest, the tea plants are shaded to develop their characteristic flavour and colour. The leaves are then carefully processed and ground into a fine powder.

Unlike leaf tea, the powder is consumed completely. Freshness, storage and the fineness of the grind therefore have a significant influence on aroma and colour.

Traditional preparation

Place about 1–2 g of powder into a bowl, add hot but not boiling water and whisk until a fine layer of foam forms.

For a latte, first mix the powder with a small amount of water before adding warm or cold milk or a plant-based alternative.

Accessories

A bowl, bamboo whisk and fine sieve make preparation easier. The sieve helps remove small lumps, while the whisk creates a smooth consistency.
