Matcha
Matcha is Japan’s most prized green tea and the centerpiece of the Japanese tea ceremony.
It is made from the delicate leaves of the Camellia sinensis plant. These leaves are shaded for several weeks before harvesting to increase their chlorophyll and amino acid content. The leaves are then separated from the stems and veins and ground into a fine powder.
Preparation is an artful process requiring patience and care. Traditionally, matcha is whisked in a bowl of hot water until it reaches a creamy consistency. This process is carried out with a bamboo whisk called a “chasen.”
Matcha has a rich, umami flavor.
Beyond being used in hot and cold tea drinks and the tea ceremony, matcha has also found a special place in other culinary applications such as baked goods, smoothies, and ice cream. Due to its strong aroma and slightly bitter, grassy flavor, it is suitable for both sweet and savory dishes. There are different quality levels, which vary in color, taste, and price.
If possible, buy fresh, finely ground matcha powder. The airtight and lightproof packaging protects against odors and bright sunlight, thus preserving the flavor and color of the matcha for longer. The powder should be consumed as soon as possible after opening, as it can easily react with oxygen and lose quality. It is recommended to store powder containers in the refrigerator.
